Sam's Swahilian Spinach
This simple spinach dish and really quick to prepare and full of goodness. It's the perfect accompaniment to Zanzibar Octopus and works great as a mild side dish to serve with curries.
What
you'll need (to serve 6-8 as a side dish):

2x 400g
bags fresh spinach, washed· 1 red onion, sliced thinly into half moons
· 2 tomatoes, sliced in half moons
· 1 1/2 tins coconut milk
· 2 cardamon pods, split down one side
· 1 whole dried chilli (keep whole so it can be found later!)
To cook:

In a
large saucepan, wilt the spinch, with just the washing water clinging to it, by
adding in batches and turning until the whole lot is in and has wilted down to
a dark green· Remove from the heat and add all the other ingredients, seasoning with salt as desired
· Put back on the heat, bring to the boil and simmer for approx 25 mins until the sauce is thick
